May Monthly Special: Yokohama Iekei (EE-Eh-Kay)
In the 1974, former truck driver Yoshimura Minoru debuts this style, combining elements of Hakata Tonkotsu and Tokyo Shoyu. 18-hour tonkotsu broth seasoned with soy sauce, doused in chicken fat. Housemade reverse cut short, medium thick noodles. Topped with blanched spinach, green onion, pork shoulder chashu, lots of nori sheets. We recommend ordering some rice to add to the soup at the end.
